“Welcome to the ultimate world of chocolate and pastries!” was the greeting extended to members of the Aventura Marketing Council and Greater North Miami Chamber of Commerce when mad mac / The Chocolate Lounge hosted a “sweet success” grand opening-networking reception at Biscayne Commons shopping plaza. Pascal Cohen, owner of mad mac / The Chocolate Lounge, welcomed business and community leaders to the gala event featuring a ribbon-cutting ceremony with city officials including Aventura Mayor Susan Gottlieb and North Miami Mayor Andre Pierre, applauding the recipe for “sweet success”: high-quality chocolates and truffles, combined with a flavorful line of macarons, homemade pastries, imaginative ice cream creations, premium cakes and desserts – swirled with delicious appetizers and enticing entrees for lunch or dinner.

While the record turnout of guests enjoyed socializing and networking to the tunes of a live cellist, it was “music to everyone’s ears” to hear mad mac’s internationally- recognized chefs Florian Bellanger and Ludovic Augendre create high-quality, exclusive recipes that are not only delicious – but healthy using fresh, pure ingredients.

Those who believe eating chocolate can release “fountain of youth” endorphins were especially impressed by the famous fourfoot tall Chocolate Fountain, mouthwatering masterpieces of pastries and chocolates and an amazing Chocolate Museum where families can discover the history of cocoa from the Aztec era to present-day.

Proving “quality and taste are a simple matter of who’s wearing the apron,” mad mac also received word-of-mouth rave reviews for appetizers, lunch and dinner specialties including smoked salmon, crab cakes, gourmet salads and sandwiches, focaccia, pasta dishes, pot pies and fantastic fondues.

Just recently, fourth grade students from the Aventura City of Excellence School were invited to educational luncheons; and they catered an extraordinarily tasteful VIP reception for the 1st annual AT&T Young Stars Showcase at the Aventura Arts & Cultural Center.

Hard-working executives planned to have lots more parties after seeing the party room by the chef’s sweet kitchen and a large outside terrace – ideal for festive occasions, making business events a pleasure. Birthday celebrations feature complimentary birthday treats, plus kids can enjoy different activities – from decorating custom-made chocolate bars, piping macarons or baking cakes – to creating personalized recipes for chocolate bonbons. “Chocoholics” are also invited to monthly chocolate cooking lessons or chocolate initiation testing and pairings for 8 to 20 people.

Before the grand opening event was over, door prizes were awarded to Cyd Yardeny of Chai Lifeline, who won a gift certificate to mad mac; and Dora Levin of Levin’s Women’s Health & Wellness, who won a one-month pass to Equinox Fitness…she surely endorses mad mac’s organic phyto fruit juice and fresh salads!

Herb Crusted Rack of Lamb with Red Wine Reduction, Yukon Gold Mashed Potatoes, Steamed Asparagus Recipe For Rack of Lamb: 1 lamb rack, frenched 1 C panko bread crumbs 1 tsp herbs de provence 2 Tbs grapeseed oil 1 C red wine (I used Shiraz) 1) Preheat oven to 425F. 2) Heat a heavy bottom skillet with 1 Tbs oil. 3) Pat lamb rack dry; season with salt and pepper. 4) Sear lamb rack sides for 3-4. 5) Prepare crumb: mix panko, herbs and remaining Tbs oil. 6) Pile crumb mixture thickly on meaty side of lamb rack and place in the over for 10-12 min until center is 125F. 7) Allow to rest for at least 5 min before cutting. Heat pan, pour red wine to deglaze pan; add any leftover lamb juice to the pan. Allow to reduce by 1/3 to 1/2. Serve over lamb. Note: leave lamb at room temperature for 30-60 min before cooking. Mashed potatoes: Boil 3-4 small yukon gold potatoes in boiling salted water for 20 min. Peel and mash potatoes; stir in 1 tsp butter, 1 Tbs heavy cream and 1 tsp milk. Season with salt and white pepper. Do not overmix or mash will be gummy. Asparagus: Clean and remove bottom of stalk. Steam for 3-7 min, depending on stalk thickness. Note: You can sprinkle on fleur de sel (I forgot to in this picture). For a little side project I made a herbs de provence crusted rack of lamb with a Shiraz pan jus reduction. The great part of it all was that I got to eat this for dinner.
