This October only, world-renowned chef and restauranteur, Matthew Kenney is partnering with 1 Hotel South Beach to serve dinner six nights a week at his ocean-front outpost within the eco-luxe resort, plnthouse. The limited availability pop-up dinner will feature recipes from Kenney’s newest cookbook, Plantlab, and true to his brand, will showcase inventive techniques and creative thinking in dishes that are visual masterpieces as well as delectable meals. Inspired new recipes include Watermelon Poke with ponzu, lime marinade, kale, macadamia nut and mint, the Green Papaya Salad with daikon radish, sesame-ginger dressing, crushed almonds and radish sprouts, and Butternut Squash Gnocchi with farro Bolognese. Plnthouse staples are included in the dinner menu such as the Zucchini Noodles with pistachio pesto, cashew ricotta and slow roasted tomatoes and the Beet and Mushroom Burger with carrot-beet ketchup, sunflower cheddar and dill pickles on a sesame bun.
Enjoy the sea-side experience in the café with nature-inspired décor or under the stars on the terrace as the wave’s crash on the adjacent shore.
