Mac’n, Miami’s First Vegetarian Food Truck Concept, Launches Project on Crowd-Funding Site, Kickstarter.com

Mac N TruckMiami’s first 100% vegetarian food truck concept, Mac’n, has launched a project on well-known crowd-funding site, Kickstarter.com, to raise funds to get on the road. Owners Francesca Lacuesta and Mark Jennings are relying on their community to make their dream a reality by raising $10,000 through Kickstarter to fund their food truck and in return, giving back some soul-soothing comfort foods.

Using only the freshest ingredients, the Mac’n menu will offer up a twist on soul food classics. Mac’n intends to drive all over Miami, dishing out 4 Cheese Mac, “Bacon” Mac, Fried “Chicken”, Sweet Potato Fries, and much more, all reasonably priced from $3.00-$6.00.

Lacuesta and Jennings are offering backers of their Mac’n Food Truck project twice the amount they pledge in “Mac’n Money” – good towards any purchase on the Mac’n Food Truck once it’s up and running in March. So, a $25 pledge would garner a $50 gift card, a $50 pledge would get $100 and so on.

With plans to focus on local ingredients and biodegradable food packaging, Mac’n Food Truck’s goal is to have a positive impact on its local community and the environment. Mac’n wants to serve up vegetarian fare with many vegan and gluten-free options – options that have been seriously lacking in the Miami food truck scene.

“Opening this food truck has been quite an undertaking since we began last October, but we are very passionate about this development and hoping the public will support our project,” said Francesca Lacuesta, co-owner of Mac’n.

“Kickstarter has been so instrumental in helping tons of artists launch their dreams and we’re hoping it will help launch ours as well,” said Mark Jennings, co-owner of Mac’n.

Francesca Lacuesta, a Northern California native and full-time college student, has been cooking vegetarian food for more than 10 years and vegan for five. Mark Jennings, a Miami native, has been in the retail industry for 20 years. Upon Lacuesta’s arrival to Miami, the two considered opening a restaurant – until they realized the potential for growth in the mobile gourmet food industry.
