Italian Roots, Seasonal Plates: Inside dōma Wynwood’s Summer Menu

Since opening in Wynwood in 2018, dōma has taken a contemporary approach to Southern Italian cooking, drawing on tradition while allowing the menu to change with the seasons. This summer, seafood, produce and bright flavors take a more prominent place at the table.

Among the starters, scallops crudo pairs mango, ponzu and jalapeño with basil-infused olive oil, while tuna tartare combines yellowfin tuna, avocado, mango, seaweed and lemon espuma. Zucchini flower tempura is filled with ricotta and basil and served with eggplant emulsion and Modena balsamic vinegar. Caprese burrata brings together heirloom tomato carpaccio, arugula gel, fig jam and eggplant puree.
The restaurant’s approach dates to its opening, when owner and founder Luca Lomonaco set out to bring a lighter, ingredient-driven expression of Italian dining to Miami.

Pasta ranges from familiar preparations to more contemporary combinations. Bucatini cacio e pepe comes with pecorino Romano, black pepper and crispy pecorino, while candele Genovese pairs slow-cooked beef ragu with Parmigiano Reggiano espuma. Tagliolini al tartufo nero is finished with black truffle, French butter and Parmigiano Reggiano.

Raviolo Mediterraneo combines ricotta-stuffed pasta with datterino tomato sauce and eggplant emulsion. Spaghetti vongole e porcini pairs clams with porcini mushroom emulsion and black garlic crumble, while tagliatelle with lamb ragu is finished with dry-aged ricotta, basil and yellow tomato coulis.

Seafood carries through the main courses. Orange-glazed salmon comes with yuzu beurre blanc, fennel salad and pine nuts, while tuna steak “scapece” is served with baby zucchini, buffalo ricotta mousse and mint. Salt-crusted branzino is served with lemon citronette, extra-virgin olive oil and a side. More substantial choices include lobster linguine with a whole Maine lobster and datterino tomato sauce, and saffron risotto with braised veal ossobuco.

Beyond the kitchen, dōma’s wine program includes approximately 800 bottles, with Italian wines accounting for about 75% of the collection. All 20 regions of Italy are represented, ranging from familiar selections to lesser-known grapes and producers.

Eight years after opening in Wynwood, dōma continues to let the season guide the menu without straying from its Italian roots. For summer, that means more seafood, fresh produce and lighter preparations suited to dining in Miami.
