Fairchild Challenge, the award-winning environmental education outreach program at Fairchild Tropical Botanic Garden conducted its annual Green Cuisine culinary competition for middle and high school students on Saturday, Feb. 23.

Approximately 100 students from across Miami-Dade County participated in the Green Cuisine competition.

This year’s contest called “Stellar Side Dish” asked students to create a new fruit or vegetable side dish that meets the nutritional needs of astronauts working in space. During the school year, students have been researching the limitations of preparing and storing food in space. Two sets of judges tasted all creations and scored the student teams.

The following teams were recognized:

Middle School
First Place: Miami Country Day School for Matcha Mousse Madness, and
Second Place: South Miami Middle School for Savory Corn Bites.

High School
FIrst Place: Christopher Columbus High School for Cabbage Patch Fairchild, and
Second Place: G. Holmes Braddock High School for Cha Cha Cha Chia.
