Bill Hansen Catering will be the first luxury caterer to participate in the Miami Spice program, starting July 8th through September 30th. As the company continues to adapt and shift its business model in response to the global pandemic, Corporate Executive Chef Dewey LoSasso has crafted a prix fixe three-course menu ($39), resembling a five-star meal at Miami’s finest restaurants, to be enjoyed at home. The menu includes a diverse selection of appetizers, entrées and desserts for all palate preferences (i.e. meat lovers, seafood enthusiasts and vegetarians). They have also partnered with luxury brand Perrier Jouet Champagne for a bubbly add-on, including a full bottle ($60) or half bottle ($40) with two souvenir Perrier Jouet champagne flutes. The menu packages are also available for special occasions including birthdays, anniversaries and weddings.
The appetizers include Lobster and Grits, in a lemongrass, black bean sauce; Chopped Salad, haricot vert, local greens, almonds, tomato, olives, shaved pecorino, tossed with an aged red wine vinaigrette; Guava BBQ Chicken Wings with charred celery and miso dip; and Shrimp and Ricotta Fritters with vanilla – lemon beurre blanc.
The entrée selection includes Grilled 1lb Maine Lobster (upgrade to 2lb for Market Price) with candied garlic butter, sweet potato mash and grilled cauliflower; Coffee Seared Filet Mignon with roasted peanuts, Glenlivet Scotch BBQ sauce and Miami Shores rosemary roasted potatoes; Summer Berry BBQ Duck with goat cheese polenta and Florida honey chili BBQ sauce paired with a mint-peach salad; Pan Seared Local Fish topped with mango BBQ baked fava beans in a sour orange reduction; Lobster, Scallop and Shrimp Penne Pasta with saffron, black garlic and parmesan crema; and Vegan Root Vegetable Chilli topped with tandoori BBQ tofu and served with Asian buns.
The menu’s homemade dessert items include Chocolate Torte with a sea salt caramel sauce; Ricotta Cheesecake with red wine and peach compote; and Grilled Angel Food Cake topped with a rum mojito sauce and sweet mango slaw.
