Bruschetta With Baguette & Fresh Tomatoes & Herbs

When your herb garden is overflowing with fresh herbs, what do you do? Make bruschetta and top it off with your favorite pesto recipe!

Making pesto is simple and delicious! It is a versatile sauce originating from Italy, traditionally made with fresh basil, garlic, pine nuts, Parmesan cheese, and olive oil. Here’s a basic recipe for classic basil pesto.

INGREDIENTS

  • 2 cups fresh basil leaves, packed
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup pine nuts (or walnuts)
  • 2-3 garlic cloves, peeled
  • 1/2 cup extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste

DIRECTIONS

 Lightly toast the pine nuts in a dry skillet over medium heat until they are golden and fragrant. This step enhances their flavor but is optional.

 Wash the fresh basil leaves thoroughly and pat them dry with paper towels.

 In a food processor or blender, combine the basil leaves, grated Parmesan cheese, toasted pine nuts (or walnuts) and peeled garlic cloves. Pulse several times until the ingredients are finely chopped and well combined.

 With the food processor running, slowly drizzle in the olive oil through the feed tube until the mixture becomes smooth and creamy. You may need to stop and scrape down the sides of the bowl with a spatula as needed.

 Season the pesto with salt and freshly ground black pepper, to taste. Pulse briefly to incorporate the seasoning.

 Use the pesto immediately as a sauce for pasta, spread for sandwiches, topping for grilled vegetables or dip for bread.

 If not using immediately, transfer the pesto to an airtight container and drizzle a thin layer of olive oil over the surface to prevent oxidation. Store in the refrigerator for up to a week, or freeze in ice cube trays for longer storage.

SUBSTITUTE INGREDIENTS: Feel free to experiment with different nuts (such as walnuts, almonds, or pistachios) or herbs (such as parsley, cilantro, or arugula) to create unique variations of pesto.

ADD LEMON JUICE: For a bright and tangy flavor, add a squeeze of fresh lemon juice to the pesto.

MAKE IT VEGAN: Skip the Parmesan cheese or use a dairy-free alternative to make vegan pesto.
