Sustainability Efforts at Time Out Market Miami

Time Out Market Miami, known for the world’s first food and cultural market experience based wholly on editorial curation is serving as the industry standard in sustainable seafood, thanks to its popular and innovative raw bar, Salt & Brine.

In partnership with Florida Sea Grant at the University of Florida, a university-based program that supports research, education and extension to conserve coastal resources and enhance economic opportunities for the people of Florida, Time Out Market Miami’s Salt & Brine is giving back to the beloved oyster by recycling their discarded shells rather than chucking them in the trash.  With less than 25% of oyster habitats remaining in the world, Salt & Brine’s Christian Plotczyk began donating used shells to Sea Grant’s pilot program with the vision of rebuilding oyster reefs around the Gulf of Mexico and all the way up the Southeastern seaboard.

In addition to Time Out Market Miami’s sustainable seafood efforts, the market also offers cost effective non-plastic alternatives, such as plates, cups and cutlery, and offers complimentary water stations for guests to refill at their leisure during their visit.  So the next time you’re in the mood for freshly shucked oysters at Salt & Brine, you can slurp a bit easier knowing you’re doing a small bit to help by returning your oyster shells which will be used to restore oyster reefs in Florida.
