Palmetto Bay has a smash hit Texas-style BBQ restaurant on its hands. Pig Floyd BBQ recently opened up where Snowden’s Grill and Bar used to be and hungry mouths are happily lining up to get a taste at this unique outdoor eatery.
Started in August, with an epic soft opening featuring the Hurricanes vs. Gators football game with 350+ attendees, owners Marc Buoniconti and Patrick Sheehy know they have scored a touchdown.
“It’s really fantastic and we’re excited to have this in our own backyard,” said Buoniconti.
Patrick Sheehy serves as the Pit Master.
“People are truly getting used to what Texas-style BBQ means,” said Sheehy. “The rules are first come, first served and when the meat runs out we are closed.”
Pig Floyd BBQ is true wood-fired barbecue, where smoke and time are critical. It can take 18 hours of slow-cook to get meat just right, so this is not cook-to-order.
“We aren’t happy when we run out and we often provide refreshments for people who are waiting in line,” says Sheehy. “But if you can’t wait for our authentic Texas-style BBQ, you can always run over to Shorty’s.”
Sheehy is quick to joke about their success.
“Before opening, we expected 300 pounds of meat would yield us a good day,” said Sheehy. “On the first day when we had to turn away 70 people that went out the window really quick. We are now up to 1000 pounds just so we can stay open for four hours. I don’t want to ever be known like Seinfeld’s Soup Nazi. We want everyone to get served.”
To that end, a new side-box smoker from Mississippi that can handle more than 800 pounds of meat was added to two other smokers already in operation in mid-September.”
The lot that makes up Pig Floyd BBQ has a massive geodome that allows about 55 seated patrons to stay out of the elements. It is equipped with two large TVs and a great sound system, perfect for watching the big game. There is also a grassy play area for the kids. It is a wonderful place to grab some great food and adult beverage and watch sports.
Building on its early success, Pig Floyd BBQ is already expanding. A mobile bar should be installed by October 1, complete with six taps and seating. They serve wine, beer and soda/water to go along with the mouth-watering smoked meats.
“We want to make sure we always bring top-quality BBQ and we are never going to compromise that for profits,” said Sheehy. “I enjoy what I’m doing and it’s not about the money. It’s about our community.”
