    With a passion for Argentine cuisine and making guests feel at home, she’s created a fine restaurant that’s a one way ticket to Buenos Aires. Her journey proves that with the right ingredients, vision, and boldness, anything is possible.

    Beyond perfecting beef, Loretta & the Butcher honors an iconic Argentine culinary tradition, led by the passionate and determined Castaño. As a powerful woman in a male-dominated industry, she runs a restaurant that embodies authenticity, quality, and community in the deepest sense.

    Castaño’s love for food began in her childhood, growing up in Colombia where meals are a symbol of unity and tradition. “Since I was a little girl, cooking has been my passion and my way of expression. And I’ve always been fascinated by how the right dish can tell a story, awaken emotions, and bring people together.”

    Her admiration for Argentina’s beloved cuisine eventually led her to acquire Loretta & the Butcher, where she brings the essence of la parrilla (Argentine grill) to the Grove. With respect for each cut of meat and a dedication to using the highest quality ingredients, she ensures each dish represents the true flavors of Argentina.

    “Loretta & the Butcher is more than a restaurant; it’s a total experience. We want patrons to feel transported to Argentina through flavors, aromas, and the welcoming warmth of the atmosphere.”

    What Makes an Argentine Grill Great?

    A true Argentine “parrilla” is more than just grilled meats, it’s a whole ritual. “Everything starts with the highest quality cuts, cooked over fire with patience. Coarse salt is all the seasoning that’s needed to highlight the succulent meat’s true flavor.”

    But beyond the food, it’s about connection. “A true parrilla is meant to be shared with friends and family, with melted provoleta, a glass of wine, and, of course, chimichurri to add the final touch. It’s about friends and family gathering around the grill, living in the moment filled with passion.” At Loretta & the Butcher, every meal is designed to capture that spirit.

    Running a restaurant as a woman comes with some challenges, but Castaño has always met them head-on with the utmost confidence and perseverance. “The biggest challenge has been breaking biases and stereotypes in a typically male-dominated industry, and proving that female leadership is equally strong and strategic.”

    Balancing her roles as a businesswoman, mother, and wife is no easy feat, but Castaño has cultivated a restaurant known for both excellence and inclusivity. “Seeing Loretta and the Butcher grow, curating a unique experience, and being passionate about leadership shows that you can balance those three crucial roles without giving up your dreams.”

    The True Taste of Argentina

    Loretta & the Butcher’s menu is specifically curated to immerse their guests in the authentic Argentine flavor. Signature dishes include bife de chorizo, ojo de bife, and entraña, all grilled to perfection.

    Another standout is Arroz del Gaucho, a bold, comforting dish that echoes Argentina’s rich culinary traditions, alongside their world-famous empanadas, crispy on the outside, boasting a variety of fillings, and bursting with flavor inside. Each dish transports guests straight to Buenos Aires, one bite at a time.

    Nicklaus Children’s and Florida International University seal the deal with new partnership

    MIAMI (May 19, 2025) – Nicklaus Children’s and Florida International University’s Herbert Wertheim College of Medicine have officially launched an academic partnership that will expand pediatric training opportunities, enhance patient care, and strengthen research in South Florida and beyond.

    The collaboration, celebrated today at FIU’s Earlene and Albert Dotson Pavilion, brings together South Florida’s top public research university and its leading pediatric hospital to address a shared mission: improve child health outcomes through education, innovation, and clinical excellence.

    “This partnership represents a powerful opportunity to innovate, educate and lead in the academic healthcare space,” said Matthew A. Love, president and CEO of Nicklaus Children’s Health System. “Coming together as the leading pediatric hospital and the leading research university in South Florida, the possibilities of changing the healthcare landscape are endless and will reinforce our commitment to making sure no child has to leave Florida for care.”

    The two organizations plan to increase the number of physicians by expanding graduate medical education programs like residencies and fellowships and help attract highly specialized physicians who will lead groundbreaking research to treat and cure childhood illnesses.

    “This partnership unites two cornerstone institutions, FIU as Miami’s public research university and Nicklaus Children’s as the region’s top pediatric hospital, with a shared purpose: to improve the health and well-being of our community’s children,” said Jeanette M. Nuñez, interim president of FIU. “By combining our strengths in education, research, and clinical care, we are creating a pipeline of future physicians and groundbreaking discoveries that will transform pediatric care in South Florida and beyond.”

    The collaboration between FIU Herbert Wertheim College of Medicine and Nicklaus Children’s will help address the anticipated nationwide pediatric physician shortage of nearly 13,000 doctors by 2037, by encouraging medical students to pursue careers in pediatrics, training the next generation of pediatricians, and recruiting world-class experts to live and practice in South Florida.

    “We believe that when a public university medical school joins with a children’s hospital, we can do more than educate doctors, we can create cures and train pediatricians who understand our neighbors and their special needs,” said Dr. Juan C. Cendan, dean of the Herbert Wertheim College of Medicine. “Through our shared vision and expertise, we can offer hope to families who may have once been told there was none.”

    FIU medical students are already embedded in the pediatric care environment at Nicklaus Children’s. As part of their third-year requirements, all medical students complete a pediatric clerkship at Nicklaus Children’s Hospital. On average, about 120 students rotate through the hospital each year, reflecting the college’s full class size.

    The announcement was especially meaningful for Dr. Stephanie San Martin.

    “FIU has been more than a university to me, it’s been a place of growth, of belonging, of possibility,” she said. “Matching at Nicklaus Children’s Hospital six years ago was a dream come true, and after completing my residency, serving as chief resident, and now finishing a pediatric hospitalist fellowship, I am a proud alumna of FIU Herbert Wertheim College of Medicine and soon to be attending physician at Nicklaus Children’s. It’s a full-circle moment that fills me with gratitude and hope.”

    How Operation Green Light Brought Hope and Help to Residents

    I am pleased to share that our first Fiscal Year 2025 Operation Green Light (OGL) event was a tremendous success. I want to extend my sincere gratitude to all our community partners—including Community Newspapers—for assisting our office in promoting this event. These collaborations played a vital role in helping us connect with as many of our constituents as possible, providing much-needed financial relief to our hardworking residents.

    Although my office does not issue traffic or parking citations, nor does it impose fines and fees in criminal or misdemeanor courts, we are mandated by Florida Statutes to send outstanding traffic, parking, and criminal court fines and fees to collections when no action is taken. This results in an additional 30% in collection surcharges. Operation Green Light allows me, as Clerk, to waive those additional fees during the event—offering residents a meaningful opportunity to resolve their debts without the burden of collection costs.

    I am proud to be the only Clerk of the Court and Comptroller in the State of Florida to host biannual, large-scale OGL events. Since assuming office, one of my top priorities has been finding innovative and compassionate ways to help our residents get back on track. With the completion of our fourth OGL event, I am proud to share that we have saved residents over $1.3 million in total collection fees.

    • Thank you to our Technical Services Department (TSD) for implementing payment plans that help residents manage their debt through reasonable monthly installments. This year, for the first time, criminal court fines and fees could be resolved online contributing to a 292% increase in payments during this OGL.
    • Thank you to our Traffic Department for your tireless efforts, which led to a 117% increase in customer participation.
    • And last but certainly not least, thank you to our Parking Division, which saw a 110% increase in activity.

    To all of our District Courthouse locations—thank you for your commitment in assisting residents, both during regular and extended hours. Your hard work made a measurable difference in the lives of those we serve.

    Together, through dedication, innovation, and compassion, we are building a stronger, more accessible system for Miami-Dade County.
