Cochon555, the nation’s most talked about premium food, wine and spirit celebration and live-event series, is back on the road in 2018, returning to Miami on Sunday, June 10. 1 Hotel South Beach will play host to a hundred-plus prominent chefs, farmers, sommeliers, distillers, brewers and barkeeps all working in concert to create luxurious moments at this stand-up, all-inclusive bacchanal celebration of tasty, heritage breed pork. At the heart, Cochon555 aims to create moments of inspiration, and to engender discussion and action – to buy, to cook, shop and donate in the name of safe, honest, and delicious food.

Cochon555 is a culinary competition that promotes local family farming and whole pig cookery through the eyes of five notable chefs. Each tasked with the goal to win votes from celebrity judges and participants, chefs have one week to prepare a 200-pound pig and present a “Judge’s Plate” scored on utilization; technique; and overall flavor. The winner of the local competition is announced the Prince or Princess of Pork and advances to the national finale. Grand Cochon spotlights the “Best 3 Bites” from all Cochon555 regional events in a head-to-tail, winner-takes-all showdown for the crown. It is taking place on September 30, 2018, in Chicago, Illinois.
The ultimate aim of Cochon555 is to provide education to chefs and consumers and create experiences that guests can sink their teeth into: honest food from real farmers. Through education, the goal is to raise the bar on building a sustainable and profitable relationship for brands and chefs participating in culinary festivals. Every event is a fundraiser for Cochon555’s sister charity, Piggy Bank, a start-up farm in Missouri that serves as a kickstarter for new family farms and a safety net for those in the wake of a disaster (flood, fire, and disease).

“The tour is about uplifting small, family farmers through epic culinary moments,” said founder Brady Lowe. “We create and restore connections between the farmer and chef who want to raise, source and serve food raised with purpose and passion. Together, through eating, we become stewards of the good food movement, motivate change and influence our food system from pasture to plate.”
Dishes for the competition are just the beginning – all in, about 1,500 pounds of responsibly raised heritage breed pork and dozens of delicious drinks from some of the best bars in Miami. The Welcome Lounge includes punches featuring Buffalo Trace and a Signature Starter Bar and Farmstead Cheese Experience featuring Cello, Yellow Door Creamery, Cypress Grove, Savile Row and La Quercia. Sip sparklers from Topo Chico and El Tesoro’s Perfect Margarita and enjoy pale lager beer from Estrella Galicia. Experience inventive cocktails from Effen Vodka and a Smoked Old Fashioned from Courvoisier, neat tastings from Glenfiddich and Woodford and a signature gin experience featuring Bombay Sapphire. The Manhattan Project will feature premium bourbon from Eagle Rare, Buffalo Trace, Woodford Reserve and Breckenridge PX Cask Finish topped with Luxardo cherries. Cochon555 will debut a new experience called Trompo “Hora de Familia” in celebration of its first Global Cochon555 event in Mexico City later this year. Enjoy a “dirty steak” by Royal Oak and learn about pairings at the TarTare Bar aligned to the wines of Antica Napa Valley, stunning Rosés from Château D’Esclans paired with organic pates from Les Trois Petits Cochons and the racy Wines of Germany paired with a culinary pop-up spotlighting a “Taste of Miami”. Experience an innovative spin on dessert spotlighting a notable pastry chef working with Perfect Puree of Napa Valley. An array of wines grouped under the “5 Winemakers” banner will feature Pax Wine Cellars; Twomey Cellars; Sandhi and more.
